Rainbow pasta salad

If you enjoy chopping you will love this recipe.


250 grams dried pasta

1 small tin of sweetcorn

 ½ cucumber diced

2 salad tomatoes diced

 A small carrot diced

½ Red pepper diced

Salami diced (optional) you could change this for cooked chicken.

Mayonnaise (to taste) roughly 6-8 tbs

Pinch of salt (optional)



  1. Cook pasta according to the instructions on the packet. After cooking it Drain and rinse the pasta with cold water (this stops the pasta from sticking together)
  • Fry salami as this brings out the flavour and gives a better texture (leave to cool).
  • Dice all the fresh ingredients.
  • In a large bowl add all ingredients plus mayonnaise and mix well. Add pepper to taste. Mix again thoroughly and serve. Depending how creamy you like the pasta you can add more or less mayo.

This will serve 3-4 people depending on portion size. ENJOY!
